I don't remember when I first had red velvet, but I remember that it was love at first bite. Joe doesn't know this, but if/when we get married, I am going to fight HARD for red velvet cupcakes with chocolate and vanilla cream cheese frosting.
I went online one day looking for a red velvet cookie recipe. What I found was A LOT of recipes. And a lot of recipes that were really different from each other, so it was difficult to compare them and figure out which one I liked better. My main problem was that based on previous experience, Joe DOES NOT like red velvet (like I said earlier, there are a lot of thing the man doesn't like). I couldn't understand this, but I knew it was important for me to create something that he WOULD like, for obvious reasons (see previous paragraph). I took what I found and smashed it all into my own delicious, Joe-approved recipe.
Triple Chocolate Red Velvet Cookies

Ingredients
1 stick butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
2 Tbsp unsweetened cocoa powder
1 1/2 c. flour
1-2 Tbsp liquid food coloring
1/2 c. white chocolate chips
1/4 c. milk chocolate chips
1/4 c. dark chocolate chips
Preheat oven to 350ºF.
Combine
all ingredients except for food coloring and chocolate chips. Mix in
food coloring until desired color is reached. Stir in all chocolate
chips.
Drop by rounded teaspoon onto a greased cookie sheet.
Bake for 9 minutes. Allow cookies to cool for a few minutes on cookie
sheets, then transfer to a wire rack to cool completely.
Yields 2 dozen cookies.
